Brown Rice & Shrimp Heaven



This is so easy to make, here is what you need:

Brown rice

Cooked shrimp (I just bought a frozen bag at Walmart)

Bell peppers (different colors)

Garlic power

Salt and Pepper

Spices: Dill Weed and Paprika

Coconut oil

Rice:  Brown rice takes a little bit longer to cook than white regular rice.  I like to make extra to keep in the fridge for another day 🙂  For each cup of rice I add two cups of water, 1 teaspoon of coconut oil and 1 teaspoon of salt.

Shrimp:  Boil one tablespoon of coconut oil in a frying pan.  Next add the shrimp and add all the spices including salt and pepper to your taste.  Don’t forget to add garlic too! Because the shrimp is already cooked I just stir the shrimp in high heat for a couple of minutes.  I like my shrimp a little crispy YUM!


Veggies (bell peppers):  Add your diced up bell peppers to the frying pan you used to for the shrimp.  This time I turn down to heat to medium high.  I like my veggies crispy too so I don’t leave them there for too long.  Just long enough to see a little golden grown in the corners.  Because the shrimp is already filled with rich flavor I do not add any salt or spices to the vegetables.  My husband loves anything with shrimp on it so this was a meal that we both enjoyed very much!
