Grilled Tomato-Basil Pita Pizza

I have always wanted to be a great cook just like my  mom.  She says she doesn’t like to do it but boy, does she cook magnificently!  I truly enjoy cooking all types of recipes, even if I know it’s going to take a couple of hours, if I think it’s going to be delicious I will make it.  Of course,  sometimes life, kids, jobs, and other responsibilities does not always give me the freedom to make something that will take longer than one hour!  There are so many go-to recipes that I go to for a quick and delicious meal that just simply works better with my family’s schedule.  This Grilled Tomato Basil Pizza is so easy to make and you only need a few ingredients!  The whole process, including the clean up afterwards it’s pretty quick too so it’s a plus plus!  First I gotta show you some pictures of my brother in law’s garden (Karen’s husband).  Every time I see it it amazes me.  Michael is pretty much multi talented and if you need help or tips on how to grow a vegetable garden he is you guy.  The Basil I used for this recipe came from his beautiful garden!

  • Pita bread
  • Pesto sauce ( I got mine from Costco)
  • Mozzarella Cheese
  • Tomatoes
  • Basil
  • Salt & Pepper
  • Butter

First, spread some melted butter to both sides of the pita bread.  I had the grill at a temperature of 350.  Next add some pesto sauce ( I used one table spoon for each bread).  Take some sliced mozzarella cheese and place them on top.  Add some salt & pepper.  Close the grill and let it melt for about 2-3 minutes.  Once it is melted the way you like it add tomatoes and basil and close the grill again for 2 minutes (the pretty leaves change to a darker color but the basil flavor melts in the cheese so it will be extra tasty!).  Once you place them on a plate, add a couple more small basil leaves.  Now enjoy and eat up!
