Tuna Rice Bowl

I have always loved tuna so I try to find different ways to cook with it.  I like being creative in the kitchen.  I wish time would allow me to do it more often.  If your life is pretty busy like ours I would suggest you cook the brown rice the night before or earlier in the day so that you have it ready for dinner!  Brown rice takes longer to cook than white rice so when I make it I make sure I make plenty for the rest of the week and sometimes I even freeze some of it.  Of course, nothing beats the taste of fresh food so when I have more time in the afternoons I like to cook everything right then and there and then have a nice dinner with my cute little family.  Just like every other recipe you’ll find in here.  It’s not complicated and it will not take hours to make!


  • 2 cans of tuna
  • 1/2 white onion
  • 3 potatoes
  • 3 zucchinis
  • 2 cups of brown rice
  • 1 lime
  • 2 table spoons of coconut oil
  • Fresh parsley
  • Salt
  • Paprika

INSTRUCTIONS: The rice will take the longest to cook so start with the brown rice.

  • In a pot boil 5 cups of water.  Than add one tablespoon of coconut oil.  I usually don’t add any salt because I want to eat healthier but go ahead and add it to your personal taste.  Add 2 cups of rice to the boiling water and turn the temperature to the lowest setting.  This takes about 30 minutes to cook.
  • Pre heat the oven to 350.  Once you have washed the potatoes and zucchinis slice them and placed them on a cookie sheet.  Add some paprika seasoning.  And place them in the oven for about 15 minutes.  Flip the potatoes and zucchinis after 5-6 minutes.
  • Chop the onions and wash them very well! In a pan heat up a table spoon of coconut oil and add in the onions.  Once the onions have a golden fried look add in the tuna.  Add salt, lime and parsley.  Mix it all together and let it cook in medium heat for about 5 minutes.
