Oh my! This was so delicious I thought I HAD to share this recipe with you guys. Most of our readers are moms or just people on the go and if you have trouble creating new exciting meals for dinner you are not alone! I enjoy cooking but I don’t have the time to spend hours and hours in the kitchen. Every time I makes this it amazes me how easy it is to make. No need to go to a fancy restaurant if you are craving a nice meal.. although I do love going out to eat and not having to worry about dishes afterwards! (or the smell that lingers for a day or two) Luckily, my husband does the dishes 90% of the time so it’s not a huge problem.
Salmon- skin off
1/2- 2 tsp Coconut oil
1 1/2 tsp Garlic
1/2 cup Panda Express Mandarin Sauce or honey
Chopped green onion
In a bowl whisk together the salt, garlic, and mandarin sauce (or honey). Brush some sauce evenly to top and bottom of the fish. Cover and let marinate in the fridge for 2 hours. When you are ready to cook. Preheat large non-stick skillet on medium heat and add oil. Place salmon fillets flesh side down. cover with a lid and cook for 2-3 minutes. Remove the lid, and cook for another minute and flip over. Cover it again and cook for anohter 2 minutes, remove the lid and cook for another minute. Serve hot garnished with green onions. We like to eat it with some steamed veggies. Enjoy!
